You know that the majority of the information in the game is read from the disk not from the HDD, and really a 7200RPM HDD would not add much more than heat to your PS3.
I highly doubt it cut load times by any fraction of a number. With that I say stick with a 5400 RPM HDD.
This is changing though - for example if you buy the download version of Warhawk - it will run 100% from your hard drive. In situations like that you will most likely see a BIG difference in access times if you are using a 7200rpm drive versus a 5400rpm drive. Any downloaded content will see the biggest speed increase. Also as far as heat goes - not so much. The newer 7200's are running at about the same heat and noise level as the 5400's - so the only reason not to go with the 7200's is added cost. But if it's worth the money to you then I say go for it.
By the way my choice is the 200gb 7200rpm IBM/Hitachi with a 16mb cache (double the norm) - as it's seek time is even faster than the 7200.2 Seagates which were previously the speed king in 2.5 drives. It'll cost you a little over $200 but is well worth it IMO as you won't need to worry about upgrading again. :)
