To answer your question about graphics - the PS3 versions will all have comparable graphics - minor revision changes to the hardware were not intended to change performance other than energy efficiency.
As far as PS3 vs 360 graphics - those differ. Other than the most platform-dedicated gamer, most will probably agree that the 360 typically had nicer output on multiplatform titles. This isn't because the hardware was "better" per se, but rather that it's much much traditional and made it a cinch for developers to write games for and port to. PS3 has some exclusives that truly shine (see, e.g., Uncharted 2 and 3) because the developers knew the weird hardware they were developing for inside and out.
Honestly, since both systems are "outdated" I wouldn't get too hung up on which one has better graphics, because both are "decent but outdated" when it comes to current gaming standards. Just get what you like (for example, if it has the exclusives that you want)
