I wanted to know if the downloadable games from PSone you can buy on PSN, are exact copies of the original ones or some of them have been updated in any way...thanks

I suppose the graphics somehow has been updated. Havn't notice any significant difference in terms of gameplay.

They're the exact original. They're also playable on PSP.

How do they look on a HDTV? Does it fit the whole screen or only a portion?

I have not played any PSone games on a PS3, but I would assume that they would look like PS2 games - only a square in the center.
