Ok this might sound weird or just coincident, same thing happens when I'm playing EA Fifa 2007. I found if I saved the game every so often it wouldn't happen. If I played the game for an hour ish it would, do you think its to do with internal memory being full?
Over heating? All though if I save every half hour ish it doesn't happen and I play over or beyond the same period it did keep happening. So i don't think its over heating. And its with an EA a game as well....
Maybe you're accidentally moving the power switch? You could try putting your PSP's power in the "Hold" position. All you have to do is turn your PSP on & then slide the power switch to the other side to "Hold".
It is interesting that saving your game more often seems to solve your problem. Does make it look like the RAM is overloaded & causes the power to switch off. You could just try putting your PSP on "Hold" & then not save for a long time. If your PSP still turns itself off then it must be a RAM/memory issue.

I Only Hear Stories About The Slim Having Those Problems
I on the otherhand have a Fat/Bloated PSP that doesnt have those health problems but im still gonna get PSP Slim someday thats if i dont buy anymore games
Well freezing during any activity that uses the networking functions of the psp can be a result of the unit overheating. I would think a game that causes the psp to over heat would cause a similar response.
Since this problem seems to be prevalent with EA titles I would guess that would be part of the problem. I'm pretty sure most of the games mentioned in this thread are ports by EA, and I would suspect that there is a particular company EA hires out to port the games. This company may not take the greatest care in creating these ports, and thus some small bugs that occur under fairly specific circumstances will go un-noticed.
So what I'm saying is, there may not be much more than a work around for this problem.

This happens occasionally when I play FIFA 11 too. It occasionally freezes up for a while and crashes, usually at random times. BTW, I have a psp-2000 slim but the same thing happens when I use my psp-1000 phat. I have this problem when playing other EA sports games too.
