The 80gb hardrive is internal and there is no external, you can use USBs and SD cards, but everything you save usually goes into the HD

You can back up all of your data using the Backup Utility under Settings > System > Backup Utility onto an external.

You can copy save data onto USB flash/external.

But the game/saves will not run off external memory

Game data and game saves must be on the internal HDD for the ps3 to utilize them. You can copy them to an external when you aren't playing that game, I suppose.

You can copy saves onto like a USB flash drive or external HDD without the Backup utility. But like the post above says, you can only run the save from the internal HDD.

an Internal Hard drive is required to save game data or install games. external USB hard drives can be used for Music, Video, and Pictures. You can also backup your game saves on external hard drive.
