I don't have one yet, but I was wondering if the headset plays all of the in-game sounds as well (I rather it didnt't).

no but sometimes you can hear the in game sounds of other people through your headset. you can also change the output setting on your ps3

Depends on the mic itself. Some cancels off the background noise if they have that feature. Mine in particular is a webcam and mic built in. So it doesn't.
