The Socom single player games in the past were based on sneaking around until you and your team had the upper hand before getting into any battle with the enemey. All of those games started with a out of balance situation that needed balanced before getting into a all out battle (you had your player that had to lead 3 others against a good number of enemies in every map).
Batman: Arkham Asylum has some stealth seactions and Siren: Blood Curse is basically a stealth / survival horror hyrbid. You could try either of those out.
