Well, actually it is really hard to think of an original ending for a game, in fact the process for an ending of a game is a happy ending, an indication of a sequel or the main character dead.

I hated the Far Cry 2 ending but I liked the part leading up to it, Hell or whatever it was called.

I haven't played Shadow of the colossus but from what I've heard it has a really great ending and would probably usurp FFVIII.
