I was going to update my 120GB PS3 Slim but I was reading off the forums on playstation.com that there are people that are having issues with it so I was wondering if I should wait a few days before updating or should I just do it anyway.

Every single update those threads pop up. I updated just fine and I'm sure many others have as well. That's not to say something won't happen when you try to update but most likely you won't.
i had no issues, i have the 500 GB version. I haven't had any problems at all with the console except for the occasional freeze. But that has only happend a handful of times the last year
