Both PoC have insanely amazing PQ. Bond and Swordfish are also extrmemly good.
Pirates Dead Mans Chest. But that movie is just okay as far as the movie itself. I personally really liked the movie Apocalypto, which looks very good as well. Here's a link discussing/ranking BD picture quality:

PS - to the original poster, which 5th Element do you have? There is one that is not great at all, and the remastered one which is significantly better.
A good place for blu-ray reviews is the avsforum.com and bluray.highdefdigest.com. these are videophiles who have the equipment and eye to tell the minute differences.
Casino Royal is really nice looking. you can actually see that the chick in there has really light freckles. 300 is nice but is grainy. Planet earth is a good show peice (the british version not the discovery channel version)
i got a p3 yesturday and i wanna start stacking up on bluray movies so far i have 300,5th element and hellboy...what are some other good looking movies??? im staying away from movies like hitch and 50 first dates just because i want something that will pop out and you can notice the sharpness of the picturedanjam2007
PLANET EARTH is awsome...documentary of the world and it shows off ur 1080p TV nicly
The best looking movie I've seen hands down is Crank. It is one of the only movies other than Apocalypto that was shot in HD I've seen and that is why it shines. When you get to the close up shots when Statham is driving in the car you can see every crinkle and crease on his face. It's creepy. Nothing I have shown my friends has really made them freak, but Crank did.
Planet Earth is also great, but it's the content you are watching that is more jaw dropping than the actual picture clarity. Some things are hit and miss, anything with mountains is just gorgeous, but some other stuff involving water is not as good. It's the content people are hyping.
