Running a disc-based game or a psn game/demo/beta? Just curious.

Well disc-based games require power for the drive to spin and scan it so a downloaded psn game will be less hard on the system, but only a little bit.
Now a beta tends to be laggy which can hurt the system, for example the Medal of Honor beta froze my PS3 2 times already.
Pretty much. But, it also depends on how much processing power the certain game is using. Uncharted 2, which is supposed to run nearly 100% of processing power, will not continue to play when you press the PS button and you didn't pause the game.

Playing a psn game will require it to spin the hard drive too unless it's a solid state, so the difference is really minimal.

The 100% processing power is tricky. Uncharted 2 was coded to take advantage of the architecture of the PS3, making it more efficient. Any game can take up 100% of the processing power (and most do, because that would be a waste), it's just that the more efficient you code it, the better you can make the graphics.
