If you're into horror games too, then Siren: Blood Curse is the way to go. Your characters are often weak and/or poorly equipped so hiding and keeping track of your enemies' (the Shibito, literally "dead person") movements is often a necessity. The game has a cool mechanic called "sight-jacking" which lets you see through the eyes of those around you, enemies and allies alike, in order to help solve puzzles and get through areas undetected.
Lol you could try playing as a stealth character in an FPS online. Very difficult to do though xD. But nothing is more satisfying than gun-butting the back of someone's head.
Riddick: Assualt on Dark Athena. While the Dark Athena campaign is not TOO stealthy it does include the Escape from Butcher Bay game that is all about the stealth. Any fan of stealth should definately check it out. Velvet Assassin is coming out soon, but you'll have to get it on Xbox 360 unless you have a good PC. I hope for your sake that you have a good PC.

MGS4 can be played quite stealthily if you choose that route. I though Splinter Cell: DA was pretty good myself, so you could try that. I believe Velvet Assassin also came out recently.
I would recommend MGS4, Assassin's Creed, and the Stickies.

Yep I forgot all about Assassins creed. Assassins Creed? I don't see the huge stealth aspect. You have to assassinate 12 people, and thats the only time stealth is amazingly important.
