Go for the PS3 500GB superslim. Sony latest revison should be Ylod resistant by this point. $299.99 for a 500GB HDD is a great value. My first PS3 was a $400.00 phat 40GB. But that was at the start of the 3rd Generation of PS3 consoles.
Eventually I "upgraded" to a first generation Phat PS3 60Giger. I also have a 320GB PS3 regular Slim. If you are picky about the look of your console. You may wish to find a regular slim. Which doesn't have "ruffles" of the superslim. There are still some 160GB, 250GB and 320GB models on sale.
If you don't mind ruffles then a SuperSlim 500GB is the best value. You will be surprised how quickly HDD's fill up. I have had 40GB,60GB,120GB, and I filled up the HDD's. Which I was surprised that I did that since I only use my Playstation 3 for Gaming. Not music or Movies/TV
So just get a 500GB Superslim and you will be fine. Plus you get Assasins creed 3 as the pack in game. Or a years worth of Playstation plus which is a years worth of Free rentals of PS3 games/PS minis/PS1 classics. At least 5 games are added each month. So it is a good value of a years worth of game rentals
160GB Slim is the best buy with a auto disc feeder at $250. These people above me that are telling you to buy a PS3 with a massive HDD mean well, but realistically most all never use much over 100GB. And if somehow you got into downloading so much crap on to your PS3 and wanted it all to stay there and needed to go higher later. You can easily do it and get a 500GB for $50 online and there's lots of makes theat work. Any SATA 5400RPM 2.5 inch laptop HDD works in PS3s. I seriously seriously doubt you would ever need more than the 160GB. I've been using my PS3 since 2 weeks after launch and have barely cracked using 80GB.
To any new PS3 owner just entering this generation I'd suggest the 500GB super slim with Playstation Plus. If you haven't entered this gen with the 7 years it's been going on, then it should provide plenty of games to keep you occupied without you needing to actually buy any.

No PS2 hardware left, two USB ports, a die-shrunken RSX, and a die-shrunken Cell on the J variant.
