maybe Qui-gon Jinn cause I think he would have had an interesting story before he died...other than that I would have to say Obi-wan. Greivous would be cool just cause he can fight with 4 sabers.

i dunno..he had a one on one in Ep II when Anakin got knocked out early.  He just seemed so slow against Dooku, compared to his lightning reflexes against Maul and Grievious.
if could be one i wish to be obi wan, see how he grows from the firsts episode, trought the episode 2, in the clone wars, in the end of vader in ep.3, when he decide take the eternal life in front of luke in ep4, when he helps luke in ep. 4,5,6, it looks great, for me hte grows of obi wan were the most amazing, in the whole movie, even anakin, he`s a tortured soul, between his destiny and desires, that in the end of episode 3 were his doom when she choose save his love above the galaxy... something interesting it could be see one jedi wookie, or just han solo using one light saber
