Out of those, I would say Guilty Gear. It had some of the most wierd and memorable character designs and the moves were intense. THe instant death moves are still fun to pull off, especailly when your getting your butt handed to you.
I wish they would make a new one. A true sequel like Guilty Gear XXX or something.

What's your favourite fighter series out of King of Fighers, Samurai Shodown, and Guilty Gears? and why? SilverfireX
Samurai Shodown because I like the characters, controller and the different weapon attacks. It is one of SNK's best fighting games. I like it best then King of the Fighters. Guilty Gear is also great because of the unique off-the-wall type characters. The balance usually isn't that great, but the style of the fight is really good. The special attacks are also worth noting. Both of these series were my favorites. I think KoF series is just too long. Way to many characters which some of they were very similar to others. KoF also had characters that performed a lot of cheep moves.
Probably GG, it is an incredibly complex and balanced fighter. Samurai Shodown is still fun to bust out every once in a while though, like many fighters of that era, there isn't enough damage scaling. I haven't really played KoF.

In it's current form, you'd be hardpressed to find a 2d fighter with better balance than GGXX^Core. XX (X2 in the states) and #Reload did have some balance issues, but slash and ^core nailed it down fairly well.
