The only one I can think of is Call of Duty: United Offensive. Specifically, the Battle of the Bulge missions.
Pretty great expansion pack.
Batman Returns, Donkey Kong Country 3 (enter Merry at file select), Parasite Eve, Home Alone 1 and 2, and Secret of Mana all have Christmas themes at some point or throughout.

The Batman Returns games are pretty good as well, especially for a time when movie adaptations were cash-ins, namely the SNES and Master System versions.
I know this game gets alot of hate but I don't give a shit it's dumb fun.
Made me think of Saints Row
They've all been mentioned, but Shenmue, most of the Yakuza games, and Christmas NiGHTS take place at this time of the year.
