Mass Effect has a pretty great sweeping soundtrack.
Deus Ex: Human Revolution and Red Dead Redemption don't exactly have orchestral soundtracks, but I want to give them a mention since the soundtracks for them are amazing.
In recent memory, Journey had nice music, although I wasn't too big of a fan of the actual game
Ocarina of Time is king though. Its been 13 years since I played that game and I still will randomly whistle the Lost Woods theme when I'm doing mundane tasks
Radiant Historia, Silent Hill 2, silent Hill3, Silent Hill Homecoming, Silent Hill Shattered Memories, Zelda: Ocarina of Time, Majora's Mask and Wind Waker... all incredible soundtracks.
YES! The music is great in every pokemon game. The originals had such memorable music. Gold and Silver expanded on that and made some even better music with just beeps and boops to work with. Ruby and saphire blew us away with the awesome music. Those game have their own style, Dat brass. Diamond Pearl had decent music, but nothing that exciting. Black and white blew me away again with those great orchestrated tracks.
Nobody has mentioned Medal of Honor yet? They all, particually Allied Assualt, have fantastic orchestral soundtracks (excluding maybe the newest one).

I'm also a bit surprised. The first time I played Frontline I got chills listening to the music during the Arnhem Knights mission. Can't say it's the best, but it's darn good and still in my head years later.
