i'm watching vids on this game and it looks cool, but seems to me like the music would get really annoying.

Hell no. The music and atmosphere are probably the most underrated aspect of this game. People love to talk about the difficulty but thats the area in which keeps me coming back to Demons Souls. Second only to Metroid Prime in that department.
never really bothered me. The only thing that's bothering me right now is how tendencys aren't working the same as on the asian version -_-

Yea, i noticed this right off the bat. Something has been changed in the world tendancy system.
I started the game, ran through the opening level, and went straight to 1-1. I didn't notice anything odd untill I got to the dragons on the hill... by odd I mean they where not there. I was able to walk right up and get the Purple Flame Sheild, just laying in the open. You have to have Pure White for that. I looked at my status screen and 1, 2, and 5 were showing as White... I have no idea why. I killed Palanx and went to 2-1 to unlock the crafting blacksmith, got that done and went back to the Nexus. No deaths yet in game, but no way I should be White.
I did save Ostavia in 1-1 right off the bat, manly because I wanted the Theifs Ring to start. Anyway, yea tendencys have been changed.
The auto-target has been changed too, and I don't like it. In the Asian version, it auto-targets the next enemy anytime you kill an active target reguardless of there position to you. That makes for some crazy camera swings sometimes, but it saves your butt when your in close quarters or fighting groups. In the NA version, if you kill your active target the auto target will only pick up another enemy if its in front of you. This sucks, and made the dog ambush in 2-1 harder then it should have been. The auto-target camera lock also looks to be different, its set a little higher above your character, with an odd downward looking angle.
I'm going to play more tommorow night, and I'll post any more changes I see. My first impression is that tendencys have been very watered down. The auto-target change (if made by Atlus) was a bad idea on their part. It cleans up the camera view, and may save you a falling death in 3-2 on the spire, but it is having a negitive impact on combat.
