yes God of War 3 is a looker but any game can look that good if they lock the camera.
1.) the camera is locked, you cant spin it 360 degrees or whatever. so this avoids the game having to render a full 360 degree environment allowing for maximum polish on screen. Even Bayonetta runs at 60fps on the 360 with a full rotateable screen
2.) all this myth of GOW3 using a special Godly MLAA technique that gives results much better than KZ3, UC3 without all the flicker issues. Ofcourse the game is full of flickering and is using the same exact code KZ3 is using but the flickering is less noticeable because the camera cant pan around meaning the screen doesnt move much and flickering occurs the most when the screen actually moves. This video shows how ugly the flickering MLAA artifact is in GOW3, Myth Busted - http://www.youtube.com/watch?v=XQXkFzCvJqQ
3.) GOW3 is so technical, kratos is fighting on mountain sized titans while they are climbing the mountains themselves...blah blah bla. Except for the part where no titans are actually climbing mountains while kratos fight on their backs, all clever Gaming tricks. Most of the titans only climb in cutscenes and during gameplay, only the shoulder, arm or head of the titan is rendered, everything else just waits to load in the upcoming cutscene. No full sized titan is ever rendered while kratos is in control, and the ones that are rendered are part of the non interactive backgrounds.
so there you have it, though GOW3 does seem to reach photorealism in some spots but only looks good because it is technically cheap, it probably has the same exact MLAA as KZ3 and the flickering mess if definitely there. there are game with full 360 camera that looks better and more technical
