Can't really pick one, since different series do different things better than all the othres. For me...
Uncharted... just great fun, excellent humor, and superb delivery on all fronts.
Portal... again, excellent humor, fun puzzles, creative and mind-twisting at the same time.
Bioshock... fun, excellent story telling techniques, and fun powers. Also, apart from plasmids, the idea of a morality-free utopia is kind of plausible.
Assassin's Creed... I haven't really enjoyed the games since the second one, but they are definitely immersive and beautiful. I love the historical setting.
Resistance... great games, though the last one sucked. I like the alternate history idea.
Heavy Rain... this is a one-of-a-kind game. I absolutely loved it. I don't think I'd want more than a couple more games like it, but it was an excellent experience.
LittleBigPlanet... one of my favorite games this generation. Unparrallelled creative options and excellent co-op.
ModNation Racers... same with the creative options for racers, and the gameplay is just excellent. The evolution of kart racers finally happened.
MAG... shows what can be done with a talented team. If there is a sequel, I imagine it will be amazing.
