Note that visually attractive = technical graphics. Shadow of the Collossus looked amazing, but didn't have the greatest technical graphics. So...post them.

The game that dropped my jaws the most has to be Shenmue for the Dreamcast. The game is 7 years old and was done on weak Dreamcast Hardware and it still holds up today, imo. Check out some pics:

Alright, being serious now, this is probably the most visually appealing game I've ever played:
I always loved starting up Crimson Skies to see the excellent depiction of a wonderfulfuturepast of the 1930s. The hybrid propellerjet planes, the massive super-zepplins, the larger than life skyscrapers, all of them do a really good job of encompacing the attitudes and dreams of the time period.
Shadow of the Colossus on the PS2was a beautiful masterpiece.Technically, it wasn't the best but artistically, it was superb.
Meh, no screenshot does justice to how magnificent Assasin's Creed can look. Wait, found some.
The draw distance, lighting and detail visible from great distances is cwazy. In most, if not all other games, the textures on the buildings would be a one-colored mess, in Assassin's Creed you can actually see individual bricks in the walls. It looks really, really crisp and clear, in a way unlike anything I can recall seeing. And the art direction is fantastic. Sometimes you just have to stop and look at it.
