I think this is the most enjoyable GTA of them all. They finally added checkpoints to missions (even though it was obvious that they would after RDR or the last IV expansion). This means you don't have to drive across the map to pick up your idiot AI partner who fails your mission by getting killed as soon as the shooting starts. I mean seriously, who thought that failing missions and restarting them 50 times due to poor AI or bad controlls was fun? They also added regenerating health, something that GTA needed from the start. Remember those last missions in San Andreas or IV? Imagine how fun those missions would have been if they had the same system. I know a guy who broke his controller trying to beat the final mission in GTA 4. That's not something I would call fun. And they added the save anywhere and autosave feature. I think every big open world game should have those, so that when life happens you can save and quit without worrying about progress.
I've completed GTA 3, Vice City, San Andreas, 4 with both expansions and 5. All of those games before Gay Tony and 5 were a chore to complete due to reasons I stated above. I loved them and hated them at the same time. I would never play them again though. But GTA 5 is a game I'm going to replay many more times. It may have a short storyline that feels a little rushed at the end. And the flying controlls still suck, or maybe I suck at them (I still jump out of the airplanes everytime I try to land). But the gameplay in 5 actually lets you have fun. Anyway, please don't flame me. Its just my opinion and I respect yours, even though many people don't seem to take yours seriously. God I can't believe I wrote two paragraphs for a freaking video game on a video game forum.
TL;DR: GTA V is the best.
