I went with 10, but I still feel like I'm leaving off way too much.
Five? I'm just gonna pick 5 that I enjoyed recently.
1. Gradius V (my all time favorite)
2. Thunder force 4 or 5 or thunder force 6
3. Mushihumesama
4. Mamoru kun norowarette shimatta/mamoru kun curse
5. Dodonpachi (og arcade)

Not even a shoot em up fan in the slightest, I just bought it because it was published by Squaresoft, and at the time they could literally do no wrong.
Ended up being one of my favorite games on the PSX, and a real hidden gem.

MUSHA is so good in every respect. From the opening cut scenes to the music to the rock solid controls. The Japanese version is superior.

I also play some indie PC shmups. My recent favorites are Gwange-Dash (The name is longer and more ridiculous, but the point is that it's a mash up of a bunch of games. This one is extremely rare but free. PM me if you want me to circulate the tapes!)

Since it recently got a remaster release, I want to get my hands on Senko no Ronde DUO. It's a unique shmup that features a head to head mode.
Man I never heard of some of these.... need to check it out.
Does anyone know if Raiden V is any good? Steam just got a remaster
The game feels good for me despite all of the reviews I've seen. I really like the hud, the little infos all around the screen, and the voice acting. Gameplay-wise, it is good, but somehow isn't that dynamic I've expected (maybe I just played too much on arcade games instead of console ports). Actually I can say I like it. The only problem I have is the welcoming message when I first started the game on PC: DO NOT TURN OF THE CONSOLE DURING SAVING! The game is good, the port however lazy as hell if you ask me.
@heirren: Yeah, MUSHA executes everything in an excellent manner. It''s also the game that got me into the genre, so I have much love for it in that regard as well.
@X_CAPCOM_X: I know the storyline is completely different, but I've never heard of any gameplay differences before, so I'll have to take heirren's word on that too, because I only have the Genesis cartridge.
Gradius Gaiden is the shit. It's right up there with V and I think the boards are more varied too. And you can set up the order of your power ups.
My memory is a little fuzzy on the older game names, I'm a huge R-Type fan so there is that.

There is so much more but those are just quickly off the top of my head. I love this genre and have been playing it ever since I was young in the arcades, but there are a ton of those games that I simply never finished...very challenging genre.
@Alucard_Prime: 1942 was good. My bro and I got so close to beating it so many times, and then ran out of quarters.
@PSP107: Never played metal slug, and only played contra: the alien wars on SNES. Great game, dunno if it's harder or easier than the NES games.

About it, not too big on the genre.
For some reason Power Strike was a different game on the MS compared to the GG.
I think the last shoot em up I played was R-Type in a games arcade in the mid 80's.
It probably the best looking game on both the Master System and C64. Remember being quite wowed by it on both systems. Although it did make the Master System chug in places.
Man I'm such a Shmup noob. Which is weird because on paper this is a genre I should love.
