As cool as I think a SotC 2 could be (bigger colossi + more freedom in how to take them down = WIN), I basically agree. I'd rather they follow another new idea than make a sequel.
I'm a big fan of Team ICO's work. They don't make massive, complex games, but they pick an idea, focus on it, and deliver an incredible experience on all fronts. If you ask me, no developer is better at bringing all the elements of a game (graphics, sound, gameplay...) together into a cohesive whole.

They have the hardware to do amazing things, now all they have to use is their head.
I too agree that having a second SotC working on the PS3 could definitely lead to a very good outcome, but making a bigger and badder version of SotC is not what I would want from them. Unless, they use the hardware to make things more than just, again, bigger and badder.
Use the amazing physics or the amazing AI to breed life and feeling into the characters, like no other Team Ico game before it. I have met only a few games this generation that have trully captured some amazing things in those areas, they trully could do amazing stuff there.
Just like you said, their games are very simple in concept; but see Ico for example, the whole game is centered on mostly just two characters, now imagine what they could do with the power of the PS3... centering their mind in giving life to only two characters and the many environmental struggle's that both of those characters have to go through, using awsome physics in the process and AI. I'm not insinuating that I want an Ico 2 here, I don't; much like you and I pointed above. The point I'm trying to get to is... just imagine how much more life and how much more affection the player would have with a character like Yorda from Ico, if it had gained a few elements of what the PS3 has to offer.
I guess the point in all the ramble above, (sorry ) was that I trully want them to use the hardware in more captivating ways for the player, than just using that hardware for the sake of it.
