I'm a sheep and I have to say that as far a traditional controllers go the 360 wins hands down. However, I think the Wii-mote has the potential to change the way we play games forever, so it deserves mention.
I like the 360, Wii Remote, Wavebird, Dreamcast, N64, SNES, and NES controllers, I owned the other consoles you listed except Saturn (did you metion Saturn?)Â and I didn't like those controllers that much.
For FPS, Xbox360 controller. For everything else, PS2 Dual Shock Controller. (Soon to be replaced by a rumbling Sixaxis with the ability to disable the Sixaxis controls when I don't feel like shaking the stupid thing. Hint hint: developers for Marvel Alliance)
I vote for the SixAxis. It's got the basic Playstation brand shape but they added in the tilt function and they made the L2/R2 triggers very nice. When SixAxis gets rumble then most people will probably say that it's the best controller on the market, similar to how PS2 was the best controller on the market last gen.
I a big PS-fanboy but I got to admit the 360 controller am the best controller around, it fit in my hand perfectly. I usually forget I’m holding the 360 controller, my fellow PS friends didn't believe me when I told them how good it felt, and the placements of the buttons are perfect. after using the PS controller for over 12 years I’ve become used to the design and it feels great, but not as good as 360s. Speaking of 360, I think the vibration feedback isn’t good at all; it’s too weak- I love dual shock vibration better; the feedback is stronger and more aggressive.

I'm at an honest tie. I think the SNES or the 360 controller is the best we've seen so far...and I am no Xbox fan so that is saying a lot about the 360's controller.
