Kinda of a silly answer in some respects, Fight Night games have always had absolutely fantastic hit detections and physics. I love fighting realistic fights and seeing an opportunistic punch send the other fighter flying. I remember being mind blown performing an unexpected knock out and seeing the slo mo, sweat glistening, blood flying, realistic sound effects, snap of the neck. Fantastic games and Im hopeful to see more games in the series despite the focus of EA on MMA games.
A few standouts, although I agree with Euphoria giving some pretty good animations.
First would be HL1, mostly based on the time it was released, the biggest impact because it was the first time I saw hit reg animations, in a game on that scale. My Favorite one would be when I shot a soldier in the leg, which then began to give out under him, and followed up with a shot in the head, rendering the animation comically over the top with him almost doing a backwards flip.
The First FEAR stands to bear notions of the same reasons, the slow mo effect made the hit animations look that much more impressive. Jumping down from a ledge shooting a grunt in slow motion, watching him drop his weapon and put his hands up towards his face, as to shield it. It was more likely then not a mix of animations and an odd viewing angle that made that animation do that, I have not noticed it so clearly in the game before, but even the usual shots to the head might do something similar, of course when they drop the weapon they are for all intends and purposes dead, just animations + ragdoll, but looked so pitiful. That combination of animations however were a bit unnerving.
While many will likely not consider it, Pretty much the entirety of BF4, the game is fast paced, but the hit animations are really freaking good, seeing a soldier running and leaning left when turning a corner, getting shot in the leg and just helplessly bang into the wall, or vaulting over a bench in sprint, getting shot which resulted in something that could only be considered an acrobatics act in an action movie.
Most impressive however was early on in the games lifecycle, when a teamm8 ran out a door, but got hit front on by a rocket, how the entire body flew backwards, with hands and legs oddly outstretched farwards, what makes BF4 (and 3) so impressive is how player animations are in generel, how they look fairly realistic, only to turn outright comedic.
Another alltime favorite was a soldier getting shot in the legs (that animation that makes them drop to the knees before keeling over), and as he knelt he got hit by an APCC driving down the road, somehow reminded me of that scene in Robocop.
And the entirety of Max Payne 3. too many to describe.
In realistic scenarios, people simply slump after being hit. My favorite hit reaction is in flight sims. I like Il-2: Cliffs of Dover because of the debris field whenever an aircraft is hit. The damage model is pretty good.
agree about euphoria. One of the things i liked the most in RDR and have no idea why this thing isn't used IN EVERY GAME. Its amazing and no one uses it...
From what I know, Euphoria is extremely expensive tech. Only Rockstar is willing to throw down the dough and actually use it.
Oh man, I've had Max Payne 1 and 2 in my Steam list for ages but I never played them because they came out in that time where a lot of PC games had weird compatibility issues with my hardware and I never got them to work.
I've gotta give them a try now that I've got a new setup.

You're going to need to do the music fix for Max Payne since it's the Steam version.
Euphoria Engine is excellent for realistic body physics and hit reaction. I think Max Payne 2 was pretty impressive for its time too. It still feels great.

When you shoot a guy off his galloping horse in RDR and he just crashes into the ground.
Or when you crash your speeding car into a wall in GTA and go flying through the windshield.
This had me applauding...
Seriously though I couldn't find a good clip that illustrates the Dead Space 2 mechanic of using your kinesis powers to grab poles or rip the spiky arms off monsters and throw it at the enemy and impale them and send them flying to get stuck in the wall where they dangle, dead. They're not the first dev to do this and there's numerous other games that have given players guns that do the same thing, there's just something really cool about ripping the arm off an enemy and throwing it into another.
