Stalker - Call Of Pripyat. Exploring Pripyat alone enhanced my senses to super human levels. Never in my life have I literally spasmed in shock over someone simply shooting their gun. Plus battling it out with bandits while you're desperately trying to find a safe place during an emission is crazy. I remember me, and 2 bandits had to squeeze into this tiny sheltered room, with guns drawn, just staring at eachother. The tension was insane lol.
ArmA II.
Crawling through the dirt as tracers fly past you, trying to keep low, get to cover and maintain your bearings on the direction of gunfire.
No other shooter captures the thrill of combat as it does.
That being one off the top of my head.

Oh Burnout 3 in particular too.
Hot Lap, no crashes, constant boosting.
Still one of the best arcade racers without a doubt.

Oh and also BC2 mulitiplayer. Rush can get pretty intense.

L4D2, when you're completely surrounded by Infected and all you can do is spin in circles spraying bullets at head level. It's the most awesome-est feeling in the world.

Motorstorm surely gave me a rush, it was awesome going at such high speeds and such in great environments, also heavy rain made my heart race while playing through. Those action scenes are crazy.
Recently the Blur beta has been doing it for me. Being in first, trying to dodge a shunt coming at you from behind, keeping second from sneaking past, then weaving around the three EMPs is quite a rush.
