Probably Uncharted. Im not saying that it looks better than GeoW technically (both are up there imo) but its overall more visually appealing. I just loved the lush green environments.
EDIT: If we're talking of all time, seeing FFX for the first time made me go 'wow'.

My benchmark for graphics this generation would be Assassins Creed (PS3/360)
The game that impressed me the most the first time I saw it would have to be Legacy of Kane (PS)
This gen: Ratchet & Clank
All time: Shadow of the Colossus
Worth listing: Okami, Zelda:WW, Dragon Quest VIII, Rogue Galaxy. In my opinion these game will never feel old (visually)
I haven't played Uncharted yet. I did play Gears(360) and UT(PS3). I just don't like the art style very much and thought R&C was much better on the eyes, the game looks great in every possible way.
Mass Effect for me.

Looked exactly like that when you played it. Sure, there was some texture pop ins, but, it is an incredible looking game, did you play it on an SDTV or an LCD HDTV?
PS1 era - I thought Crash Bandicoot and Syphon Filter looked awesome, lol. Ah how far graphics have come.
PS2 era - Grand Theft Auto San Andreas took the cake for me. The cities were amazing to look at, still is I think.
Now - Uncharted: Drake's Fortune, then Gears of War, then COD4.
Ah! And I almost forgot - I remember being completely wow'd by Star Fox on the SNES. I remember that game being sooo much fun. I only rented it, so I didnt get to spend alot of time with it, but I rented it for once in my entire life time, and it was the only time I've ever played it in my entire life - and I will never forget how awesome I thought the game looked and played.
either timesplitters future perfect , it still look like an early 360 launch game which is pretty good but the king is goldeney007/perfect dark on the nintendo 64 this game is the most graphically improved game on the n64,
it had shown detail that werent in many n64 games, also the first and in my opinion the only movie tie in aside from other bond games , that was a great game and did very well ,
also on an n64 cart being limited in space didnt stop them from putting alot of stuff into these 2 games , inface i compared it to every single gc xbox ps3 ps2 xbox360 game and found only 3 of these fpses ive played on these newer consoles. has had alot of stuff packed in pretty odd considering the fact these games are on a higher capacity disc then goldeneye pd and timesplitters

fanboy much? how ANYONE can overlook Uncharted is beyond me. GT5P is the most realistic looking console game ever released.
gears was the first game this gen that made me go wow..
but a lot of other games have since then impressed me.
well on a technical side...crysis at max settings. its a real perty game. i must reinstall it and try the manural mods....there supposed to really improve things again. but yeah....a really really pretty game. good fun too.
on the more artistic side....okami is greater than all.
