All 360 games that have released since Lost Planet can do full and true 1080p through HDMI.
PS3 and xbox360 can not do 1920×1080 in many games, only the least graphically demanding ones. Most xbox360 and ps3 games are 720p, or 1280x720, which is medium when one compares it to a pc. Most pc users use higher resolutions than this for most of their games.
The wii onyldoes 480p, or 720x480 due to interfacing choices nintendo cose ot go with, by exclusing a frambuffer etc.
Even the ps2, a console much weaker than the gamecube, could do 1080p. And it did in some games. Yet the gamecube couldn't due above 480p either, once again due to the lack of a significant frambuffer, it has nothing to do with lack of gpu power.
Nintendo excluded an onboard framebuffer to save costs.

Only one example? And Ninja Gaiden Sigma is ALMOSTan enriched port of an xbox1 game, so 1080p is expected.

360 can also do 1080p through component, as long as the TV has component inputs that support 1080p. GRAW 2 on 360 can be played in 1080p. Additionaly, the VGA cable for the 360 allows for 1920x1080 resolution, as long as the monitor, or TV supports that resolution.

If Gears of War runs at 1280x720 on 360, so will BioShock (probably).

TO be honest though, I didn't consider that in Europe Wii's would have the option for 576p to output the progressive (and yes, 576p is ED) version of their standard definition for upscaling to HD resolutions.
