IMO it either tekken or dead or alive i really like doas combos.
I generally don't like many fighting games. A few of the ones I actually liked are Melty Blood and the King of Fighters titles.
doa series and tekken series for 3d fighters and for 2d you can go with street fighter (alpha 3 is my favorite) and i guess marvel vs capcom 2 thats a classic

If you like boobies, then DOA. If you like technical fighters, VF. If you like crazy, wild, over-the-top stuff, then Tekken.
Best 2D fighter in my opinion goes to Marvel vs. Capcom 2. Best 3D fighter in my opinion goes to Soul Calibur.
