I will tell you my oppinion after some of yours. :)

Visuals believe me or not is a game from the past.16 years in the past.Yes it is.Gabriel Knight 2 Beast Within FMV (full motion video) graphics maybe a little too pixeled,but the game is realistic.I don't know why they don't use it in the present.Later for gameplay i think Heavy Rain maybe, but i am not very sure.For characters maybe Heavy Rain or Persona 4.And for sound i like the jungles in MGS3 : Snake Eater.
Shenmue 1 and 2. They're old now, but even if you spin them today, you can tell they were way ahead of their time. Shenmue's attention to detail is staggering:

As for gameplay, maybe Grand Theft Auto IV. All the small details add up to create a living, breathing game world with a great atmosphere. I guess the same goes for Red Dead Redemption, but I haven't played it as much.
Graphics-wise, most photorealistic if you will, it's either modded Grand Theft Auto IV or Crysis. Mirror's Edge had some beautiful moments as well, but I'd say it's more on the arty side.
Hmm, perhaps not real but more like a real portrayal of an old time western movie - no doubt about it. :P

You guys must have super computers. I can only pump out a mixture of medium and highs.
Red Dead Redemption i guess both artistically and visually becuase i don't really play that many realistic looking games.
I would say ARMA2 takes the cake for realistic looking game, RDR is up there, and whoever posted the Shemanue (spelling?) pics does have a very valid point aswell ^^
Hide and seek. You hide, and people seek you. That applies to more than one situation in your life at one point. THAT's what I call realistic.
What's more, it even looks EXACTLY like real life! Because it is real life! :o
It is probably Arma II, but for me its Bad company 2. I think Battlefield 3 (PC) will be the winner though.
