To answer, I think I would drop off one of the services if that happened. I would simply stop subscribing to both and choose one.
To date for PS4:
$50 PS+ has offered 20 PS+ free games (goes beyond 2 games a month at times, this month releasing 4 new games, never repeats)
To date for Xbone:
$60 XBLG has offered 7 GwG free games (multiple months of releasing a single new game a month, repeats games month-to-month).
20 PS+ free games >>> 7 GwG free games
---
Then there is the bonuses to think of if you have other machines:
- PS3 (2-4 newer-older games a month),
- Vita (2-4 newer-older games a month).
- 360 (2 older games a month, one exception on the GwG Anniversary they offered a 3rd game).
I own them all.
If I had to cut off one or the other if there were price hikes, it is incredibly obvious to me which one I would cut based on the trend so far.

because Sony are raising the price of PS+ in select regions of the UK and Australia by more than 50%. US seems to be safe but for how long?

But why do we even pay in the first place anyway? When we play a game online it cost nothing to Sony unless we are playing one of their first party games and even then, they mostly use P2P that cost virtually nothing.
Link: "Sony is raising the cost of a PS Plus subscription in select regions including South Africa, Ukraine, Russia, Turkey and India."
The areas are again: South Africa, Ukraine, Russia, Turkey and India. They cited "market conditions".
It doesn't say UK or AU. "When we asked Sony whether the UK or EU should expect any changes, we were told "Customers will be notified of any price adjustments for their subscription services but there is nothing to announce at this time."
