A update was posted on Monday on SDA saying that there is a new record for Majora's Mask. A player by the name of Daniel Hart completed Majora's Mask in 2 hours and 3 minuted single-segment.

haha, wow the desciptors are pretty awesome:

*Great Bay
Messed up the Superslide to the fence, which costs a few seconds. I mess up the HESS when I enter Great Bay and get a normal ESS, then I try to SS out of it and miss that, which also costs a few seconds. I get the Zora Mask then proceed to mess up terribly on the Zora Pots game, which costs even more time.
That's an impressive level of dedication to worry about a couple seconds when completing a game this long.
Seems fun to be good at speed-runing, but I can't imagine how many times you would have to play through a game to become that good. I would worry about becoming sick of the game by the time you get so good.

It's very possible to get sick of a game. I remember reading the comments of a speed runner who played Yoshi's Island so much that he didn't want to see the game for years.
"This run came to origin with the intention as a side project to my main attraction to do Super Mario World 2:Yoshi's Island 100% single-segment. But as the 100% SS was becoming more of a pain in the ass, and my tolerance for the game was wearing thin (to a point where I wouldn't want to see it for years to come), thankfully, I paused development and switched to this game." - Sly Cooper 1 speed run comments
That particular runner was going to do all three Sly Cooper games, but...
"It's also worth mentioning that there was a possibility of me going on a Sly frenzy to speedrun all 3 games. But, the unskipable cutscenes about Sly's (quoted from Psychochild) SUPAR SNEEEEEEAKY MOVES AKA how to hit the circle button when next to obvious indicators to hit the circle button pissed me off beyond reason. And I hear Sly 2 and 3 have almost triple the amount, screw that!"
I did attempt a speed run on my own of Second Sight. It was just to see how well I could do while getting the lowest stats possible. Played it so much I never want to play it again, or at least, not for a long time.
Anyway, back to Zelda...
I though that this page might be of interest.

Here is a site for Zelda speed runners. Most Zelda speed runners that once gathered on the SDA forums gather here. You can look up various tricks and glitches. And there are also links to the SDA website as well as TASVideos (tool-assisted speedruns).

At the moment, I just have my DS and PC available, so I might look into it some other time.
I did some speed runs once as well actually. My record on Super Mario 64 is 3 hours 28 minuts 33 seconds. I think the record is just above two hours.

If you're talking about getting all 120 stars, then yes. The record is a little over 2 hours in one sitting.
The best record overall is slightly over 17 minutes with only 16 stars.

Also if you click on the Knowledge Base link on the SDA homepage, there are tips on how to properly record a speed run on a DS and for PC if you're interested though the PC can be both simple and complex.
You all should check out the OOT speedrun. Using really interesting glitches, the fastest time is 2 hours 26 minutes and 56 seconds. If you watch parts 16, 17, and 24 of the run, you'll be amused.
