Jet Set Radio Future is most definately worth getting, but not for its multiplayer.
UC2 is great and it has bots. One of the best offline multiplayer games there is.
If you are into Star Wars you could also try "Battlefront 2". Its like a shallower version of Battlefield 1942 set in the star wars universe. If you are a fan its great. If you are not it might still be fun to play if you have friends around and you needa game with bots because they don't want to compete with you directly.
Soul Calibur 2 is an awesome fighting game. Its very easy to learn but hard to master. It rewards skill over button mashing but the skill isn't that much about remembering combos as it is in some fighting games but its more about "natural skill", like, having fast reflexes so some people say its a button masher because they get beat by a newbie. In fact they got beat because the newbie played better than them for whatever reason. Buttonmashing gets you nowhere in that game.
You can also take turns in fighting bots, if your friend doesn't want to play against you.
Ghost Recon 1 and "Island Thunder" are awesome tactical shooter classics. They are rather old ports of even older pc games and it shows. The levels are pretty empty, there are no weapon models in the first person view etc. Nevertheless the game has a cool realistic look to it and it still plays absolutely great. There is a multiplayer mode though I doubt you can have much fun with it with only two people. The game just isn't made for deathmatches. But there is a co-op mode which is of course every bit as great as teh singleplayer, or even greater if your friend knows what he is doing.
I recommend this over Ghost Recon 2 or Summit Strike if you want the game to be tactical. If you want a slightly faster pace then GR2 and Summit Strike are great games too. They too have a great co-op mode.
