What game do you think deserves being named the greatest XBOX (not 360) fighting game of all time? Without a doubt, I have to say Dead Or Alive ultimate.
DoA series looks excellent but has no substance. You get DoA, you first see it, you go WOW, the graphics, and wow, the pretty girls, and um.., the gameplay is not that bad either. BUT after like 2 weeks, you go, WOW this is some boring SH*T. There is just no that much in the game for you to enjoy for a period of time like Soul Calibur 2. So Soul Calibur gets my vote.
No one mentioned the game that I think is the greatest fighter game and I am shocked. I vote for Bloody Roar Extreme. I would play bloody roar extreme over Dead or Alive any day. Check out bloody roar if you have never heard of it. You can fight as a human and then transform into an animal or some wierd beast and kick even more ass. Also Fight Night Round 3 is a good game but it isn't really the same genre as DOA or Bloody roar. Fight Night round 3 is a fun fighting game that requires good timing and strategy, while DOA and Bloody Roar are your normal Arcade type fighting games.
Street Fighter Anniversary Edition is the best (if you have Xbox live).  Followed by Guilty Gear X2# Reload, Capcom Vs SNK 2, and Soul Calibur II,     (In that order)
dead or alive 3 offers an easy way to counter attack...my moob friend join a match with me and he just kept pushing X along with tilting the d pad like crazy,and he won!!!!!!!!!!

SFAC (Third Strike, don't care too much about HSF2) CvS2 (although not arcade perfect, the Xbox version is playable) GGXX#R (one would be better off getting a PS2 + GGXXS/GGXXAC, though)
