So I plug my two red and white audio cables directley to surround sound then the optical cable, and ta-da?

nope, just the optical. it takes place of the red and whites...

Red and white is stereo sound, but digital optical gives real 5.1 surround sound. No need for the red and white

5.1 headphones? never heard of them? do they have 6 speakers in the headset? sounds cool.

Red and White only gives 2 channels of audio. If you want 5.1 you will have to use the toslink optical out plug, or if you have a newer 360 I believe you can get 5.1 over HDMI (please correct me if I'm wrong).
