I am EXTREMELY excited for Fable 2 after watching the demo. I was a huge fan of Fable, I would have to say it was one of the best RPG/action titles I have played yet.

Not really. I played through Fable, and thought it was pretty good, but didn't feel like a cohesive experience. It had all the parts of a great game, but it didn't come together the way it should have. I'm also going to have trouble believing anything Peter Molyneux says from now until it's released. By the way, I played Fable without ANY knowledge of what was "supposed" to be in it and was still disappointed.
Fable and Halo 2 were my top two XB1 games. I've been looking forward to Fable 2 ever since the trailer last E3, and what was shown at the GDC was icing. I'm really excited now, too bad the game likely won't be an '07 release at this point.
I don't believe anything said about Fable anymore until I actually play the game myself. Way too many things said about the first that didn't make it into the game, and to me it sounds like the same thing is going to happen with Fable 2. Despite the fact Peter said he won't tell us anything that he isn't positive will be in the final game. So, at the moment, not really, but I'll watch it.
