how do i pickpocket the wheat trader without him seeing me?

can anybody give me some hints?

I don't know who you're talking about but I always just 'blended' until they turned around once, then once they started walking stole from them

Wheat trader? All I pickpocket in the game are the thugs and the npc part in the objectives...
