From what I remember, Skate and Dead Rising both had really good demos. Too bad the games couldn't keep up with the high level the demos set (not that the games were bad, they just werent as good as expected). Fifa Street 3 has gotta be one of the worst.
The first skate demo made me want a 360, the second skate demo made me buy a game day of release, the RE5 demo made me rethink my entire universe.. I am no longer excited for RE5...
All time ?? I'd go with Bioshock. I just had to get the game afterwords. Over the last year, it hard to make a choice. Most of the released demos were bad. I have to say Halo Wars, but it did not convince me to buy the game.

Both games were eventually bought for about $15 to give the devs some money (though now that I think of it, I bought both used, so I guess that was fail...)
very late response so late nobody will probably ever read it here goes ...Well I'm currently playing Crysis 2 demo , i'd rate it as a demo ( 9/10) multiplayer and its really a lot of fun a bit similar to halo and call of duty rolled into one.. only 2 maps but those are pretty good ones.
also I'm playing Nail'd demo I'd rate it as a demo (8/10) , two courses and can customize your quad its a challenge for me and very hard to win !!!
Also the Call of duty black ops demo, i'd rate it as a demo (8/10) for those that haven't got around to purchasing the full game yet is good stuff you get to complete a full mission, the combat is intense and varied but be warned after its finished you will probably get the thirst and want more you can select your difficulty which helps add to the demos longevity .. there's no multiplayer with this its a single player event and there's some bugs not many and hardly noticeable but its a generous demo and a worthy contender to check out if you haven't already
Can't believe nobody has said the Phantasy Star Universe demo. Easily got the most RV out of any demo and best of all it's still on!

Haha yeah, I had good times with friends on this one. The Too Human demo was really good. Each play through lasted 1-2 hours and you could modify you Xbox's clock to unlock all the classes to play the demo with.
