The Lost Planet E3 demo last year was pretty damn good when it came out. I haven't played a good demo since then, though Ace Combat 6 is pretty enjoyable.
Crackdown was a fun demo, Shadowrun was a pretty good demo, I remember playing FNR3 demo a number of times, Saints Row demo was fun for a bit too (didn't make me wanna buy the game though, like the others.

gotta be crackdown. you could run around and act a fool for a long time. kinda felt like the whole game, just cut short by the time limit. same for blue dragon though. ace combat is pretty sick. but I also like project sylpheed (i know i know, everyone else hates it)

Yes! I remember how suprised I was when I first got my 360 and played the LP demo; even though I was playing in SD back then, the graphics and gameplay felt really "next gen"...good stuff..
