Gears of War is a good starting game... I found Def Jam to be actually pretty good for a fighting game, but Gears or Oblivion would be my first game...
In that case how about a little guidance? What kind of game would you like? I'd say go for Vegas or Oblivion. Get xbox live if you don't have it already, and don't forget about the arcade.
if you like rpgs you should wait until mass effect comes out later this year. in the meantime (since you said you beat gears) you should get more shooters like vegas and graw2.
If you like racing games, you should give Project Gotham Racing 3 a try - that´s a great mixture between arcade and simulation and it should be a cheap buy now.
And next to Gears od War you should try Lost Planet with its lovely online-gaming.

I have beat Gears of Wars, that is why it is not one of my options and I have played Dead Rising and have hated it
