The bolt action rifles are the Kar98k and the Lee Enfield, and the assault rifles are the Bren LMG, BAR, FG42, and the MP44. To get the assault rifle achivement, play the third level (I think). It's the American one in the rain with the tanks. You start out with the BAR, use it through the whole level and when you run out of ammunition, pick up the German FG42 and use that.
