I actually tried the same thing about 4 months ago or something, and I shot M$ an email. After a bit of hunting I still have it filed, too:

I apologize for the inconvenience. I understand that you want to associate your gamertag to a different Windows Live ID.
Unfortunately, you cannot change the Windows Live ID account that is associated with your Xbox Live gamer profile. This behavior is by design. The Windows Live ID credentials that you used when you added Xbox Live to your gamer profile are permanently associated with your Xbox Live enabled profile.
Even if you cancel your Xbox Live account, you cannot use the same Windows Live ID account together with a new Xbox Live enabled profile. Your Windows Live ID credentials are permanently linked to a specific Xbox Live enabled profile. You cannot break this link.
Your current account is parentally controlled and you become an adult, your account will continue to be parentally controlled. You must have the owner of the Windows Live ID account who established parental controls on your account turn off those parental controls so that you can use the Xbox Live enabled profile without restrictions.
