someone explain the signifigance of a new SKU?

A SKU is a Stock Keeping Unit, basically it aids in checking inventory, every different product has a id number, which is a SKUis it simply the product ID number that all new products get?
original 360 has a sku, arcade 360 has a sku, 360 elite has a sku, of course this new one would have its own sku?
am I missing something?
