Bioshock, The Darkness, Rainbow Six Vegas, Lost Planet, Far Cry 2 maybe you can consider Fallout 3 which is an RPG but the combat is fashioned like a shooter

COD4, Bioshock, Orange Box, FEAR 1 & 2 (+FEAR Files), Rainbow Six Vegas 1 & 2, Mass Effect (it's a role playing game though, but it includes shooting), Brothers In Arms: Hell's Highway
Ghost Recon Advanced Warfighter 1 & 2, BioShock, Call of Duty 2, Modern Warfare and Rainbow Six Vegas 1 & 2 (both of which have terrorist hunt modes separate from the campaign).
I would say COD4 like everyone else but to be honest the strong point in that game is the multiplayer, although I really liked the campaign. Halo 3: ODST had a fun campaign although it was a little short. Also, I've heard great things about Borderlands so you might want to check that out.

Far cry 2 gets really dry, really quickly. I'd suggest something a bit more fun, borderlands is good and recent, although loads of ppl would say this game is only good in co-op, I play it single player and its awsome. Call of Juarez: Bound in Blood is a really good single player game that came out this year, nailed the western old school fps coyboy gameplay right on the head. Definitely look into that game.
It's disturbing that no one had mentioned Half-Life 2 and the Orange Box. HL2 is by far the best single player shooter experience on Xbox. Or any platform for that matter.
