Most any sports game is an easy 1k. Even if the achievements make you play on a certain difficulty, you can always edit the players attributes. Setting the speed of the other team to 0 in Madden is funny as hell the first time. They barely get to the line in time.
King Kong, Lost: Via Domus, Oblivion, TMNT, Alone in the Dark, Eregon, Cars, Pimp My Ride, Open Season, Superman Returns, Prey (Super Easy), Bionicle, Tenchu Z. And many more, but I dont think they are really easy.
