lol, Sephiroth was value. You pay $50 for a game and it takes 10 hours just to beat the last boss alone, lol.
Seriously, I called into work because I beat him about 10 minutes before I had to be in... I'm just like "I'm not coming in..." and they say "Why?" and I say, "I'm just... not." Fact is, it takes so long to beat the guy, I'll be damned if I'm not going to kick back and watch those credits roll!
The Shadow of the collosus bosses are all awesome! My favorite is the the snake dragon thing that flew in the air! I was so epic riding next to it on my horse, then jumping on it and flying around in the sky.

I've forgotten her name but that pink lady from Ninja Gaiden, the first time you fight her. That was seriously such an awesome and difficult fight, i was so happy when i finally won.
I got a boss that I'm gonna go ahead and throw in for comic value, the huge tank at the end of the first act in alien hominid. Its not hard or anything but you can't beat killing bad guys by picking them up with your tractor beam and dropping them into a wood chipper

just because he was so patheticly easy, even the first time around, I'm going with the vigoorian Emperor from Ninja Gaiden,
but the only hard ones in that were the first two, on the first time around, Murai was a pain in the butt until i figured out how to do wall attacks, and that horse boss!!!!! dont get me started on him, i probably busted our controllers like three times!!!!!!
there was a game called TOTALLY RAD for NES and every single boss was huge and colorful challenging... that was my favorite game for the longest time. because of the bosses and whatnot. bosses in Zelda: Ocarina on time were pretty good. (my roomate and i just started going through it again) I love the bosses from megaman games too

I'll second this. On hard, he was almost impossible to beat. Huge map and you had to find his sniper position mostly by luck, and if you moved in the open he'd shoot your ass so quick. I hated that dude, took me hours. I hyped it all up for my roomate, and when he played it on easy(hes kind of a biotch) he beat him in like 5 minutes!
Sephy was pretty easy once you got a stretagy going. And I haven't played to many games lately that have bosses. Last I can remember was that damned thing at the end of Blinx 2. I guess I'll go with Ganon on OOT, great cinematic fight, would look great with todays graphics.
I liked a lot of the bosses in Lost Planet and MGS. But I would say the most fun boss fight is in MGS2 where you have to fight all of those Metal Gears...fun.
