Are we talking X360 only? Or EVER on any platform? If so, then throw the Doom, Max Payne and Qwake series into the mix. Possibly Duke Nukem too? All of those games were a blast.
in single player - half life 2. multiplayer currently i would say cod4 but the original ghost recon on PC was god damn beautiful as well. lets get some variety people, everyone knows bioshock and halo 3 are gonna be popular so lets see some interesting games!
