Compared to FN4 the punching seems way too fast. It feels more arcady than an actual SIM. Thus, I passed on buying after playing the demo.

I think defense is fine. Just don't stand in front of the other guy and start spamming punches. Of course you'll get hit if you do that. Stick and move. And I'm not just trying to spout out a cliched boxing phrase. Get in, get a few shots in, get out. Turn your opponent. Walk circles around him. Side step him. Bob and weave. Don't just hold the RT and hope that everything will get blocked because it won't.

FN 1 and 2 were great, the response to controls was amazing, you could have an actual fight. Starting with 3, the series went downhill.

Personally I thought they dumbed down the defense too much in FNR4. I enjoyed how it was in the first 3 games where you actually had to defend both your head and body. in FNR4 you just pull RT and it defends everything for you.
