I downloaded this demo the first day it released, but I havent had the chance to really sit down and disect it a bit until now.
Gameplay: I enjoy it a lot. In my opnion the cars handle a lot better and arent as stiff. Fells more like a sim to me. (one thing I cant stand about the other simulator out there "Gran Tourismo", the cars dont feel realistic. Granted I havent driven every car in the game and cant speak on every car, but two things in general. 1. cars dont look like there doing 20 when they are doing 80 as I find is the case with the GT games. sense of speed kind of sucks. and while it wasnt the best on the first Forza I think it was pretty good and felt accurate enough. 2. cars do not start screeching tires when you make a wide (not sharp) turn at, lets say 15mph. ) I really liked the handling and sense of speed that this game has. I think its a great improvement from the first Forza. I'd give the gameplay a 9.
Graphics: I found the games lighting to be amazing simply put. Cars models were pretty good, though they didnt blow me away like I had expected them too. PGr 3's car models wowed me more. Not sure which has better models. Maybe Forza's are on par, but since it wasnt a new experience as far as graphics they didnt wow me. Aspault and scenery looked pretty good, but I've seen much better out of a racing game. Namely GT4 and GTHD. Those two have some incredible sceneray. Another thing I had hoped for was 1080 support. 720 is ok but with GT4 on ps2 supporting 1080i I  think there is no excuse. Overall it looks good, but I just felt that is was missing that wow factor that I expected from a next gen racing title let alone Forza. I know its a demo and the final build could perhaps look better, but with the release later this month I dont expect it too. I'd give the graphics an 8.

Sound: Excellent is all I have to say.
Â
All in all if I had to rate the demo Id say its a solid 9 and I think the final game will fall somewhere near that.

I think it would be cool to hear everyone elses thoughts on the demo.
